Ingredients

  • 200 g of chicken in small pieces
  • 100 g of raw ham
  • 50 g of grated cheese
  • 20 g of butter
  • 100 g of toasted bread
  • Salt and pepper to taste
  • 1 tablespoon of soy sauce
  • 1 tablespoon of olive oil

Method

  1. In a pan, melt the butter and the raw ham together.
  2. Add the chicken pieces and cook until the chicken is well done.
  3. In another pan, sauté the toasted bread with olive oil and salt.
  4. Add the grated cheese and stir until the cheese is fully melted.
  5. In a bowl, mix the soy sauce.
  6. Assemble the Petit Salé by placing a spoonful of sautéed bread at the bottom, then the chicken pieces, and finally the soy sauce.
  7. Serve immediately to enjoy the crunchy and intense flavor of this appetizer.

The story

Petit Salé à l'Epicière is a traditional Parisian delicacy, born in the 19th century when small grocery shops, or epiceries, created their own specialties for customers.
