Ingredients

  • 4 lamb chops
  • 100 g grated pecorino cheese
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon chopped parsley
  • Salt and pepper to taste
  • 1 bay leaf
  • 1 tablespoon white wine

Method

  1. Season the lamb chops with a pinch of salt and pepper.
  2. In a bowl, mix the grated pecorino cheese with minced garlic, chopped parsley, salt, and pepper.
  3. Dip the lamb chops in the pecorino mixture and let them rest for 15 minutes.
  4. Heat a pan with olive oil.
  5. Add the lamb chops and cook for 3-4 minutes on each side.
  6. Pour in the white wine and let it evaporate for 1 minute.
  7. Add the bay leaf and cook for 2 more minutes to infuse the meat with the flavor.
  8. Serve hot with a drizzle of sauce.
