Ingredients

  • 500 g of wheat flour
  • 300 ml of cold water
  • 10 g of fresh yeast
  • 10 g of salt
  • 1 tablespoon of olive oil
  • 50 g of sesame seeds
  • 50 g of fennel seeds
  • 50 g of wild fennel seeds

Method

  1. In a bowl, mix the flour, yeast, and salt.
  2. Add the cold water and olive oil, kneading until a homogeneous dough is formed.
  3. Cover the bowl with a clean cloth and let it rise for about 1 hour, until the dough has halved in size.
  4. Shape the dough into a loaf and sprinkle with sesame seeds, fennel seeds, and wild fennel seeds.
  5. Let it rise for an additional 30 minutes, then bake in a preheated oven at 220°C for about 45-50 minutes, until the bread is golden.
  6. Allow to cool before slicing.
