Ingredients

  • 200 gr of fresh peas
  • 50 ml of olive oil
  • 2 chopped onions
  • 100 ml of vegetable broth
  • salt and pepper to taste
  • 20 gr of raw prosciutto cut into strips
  • 20 gr of butter
  • 20 gr of grana padano cheese grated
  • 100 ml of bean broth

Method

  1. Clean and shake the peas to remove the leaves and strings.
  2. In a pan, heat the olive oil and sauté the garlic and onions until they become golden.
  3. Add the peas and cook for about 5 minutes on medium heat.
  4. Add the vegetable broth and bean broth, cover and cook for another 5-7 minutes.
  5. Add the prosciutto, butter, and grana padano, mix well and serve immediately.
  6. Served with bread or as an appetizer, it's both messy and crunchy.

This dish originates from the Ligurian coast of Sestri Levante, where peas have been harvested and used to prepare a delicious sauce for generations.
