Paximadi (Rusks)

An ancient Greek sweet made from toasted bread and spices.

Ingredients
- 200 g of hard wheat bread
- 100 ml of olive oil
- 50 g of sugar
- 1 tablespoon of cinnamon powder
- 1/2 teaspoon of saffron
- 1/2 teaspoon of black pepper
- 1/4 cup of warm water
- Salt to taste
- 1 whole egg
Method
- Cut the bread into slices about 1 cm thick.
- In a bowl, mix the oil, sugar, cinnamon, saffron, pepper, and salt.
- Dip the bread slices in the oil and sugar mixture, making sure they are well coated.
- Arrange the bread slices in a baking dish and bake in a preheated oven at 180°C for 20-25 minutes, or until golden.
- Remove from the oven and let the paximadi cool, then dust with a beaten whole egg.
- Return to the oven and bake for another 5-10 minutes at 180°C until the egg white is dry and golden.
- Allow to cool completely before serving.
