The São Paulo pastel is a crunchy delight with various fillings, perfect for an appetizer or light lunch.

Ingredients
- 200g of flour
- 100g of butter
- 1 egg
- 100g of lard
- 100g of onion
- 50g of speck
- 100g of mushrooms
- salt and pepper to taste
- 100g of mozzarella cheese
- oil for frying
Method
- Mix the flour with chilled butter in small pieces until you get a dough that sticks slightly to your hands.
- Add the egg and a bit of salt and pepper, mixing well.
- Form balls of similar size and gather them on a baking paper.
- Make the filling by mixing lard, onion, speck, mushrooms and mozzarella, seasoning with salt and pepper.
- Divide the dough balls in half and fill them with the filling, sealing them to form pastels.
- Fry the pastels in plenty of hot oil until they are crispy.
- Serving: serve with soy sauce or chimichurri sauce.
The story
Pastel originated in southern Brazil but has become a culinary symbol in São Paulo with various fillings and variations.
