Pasta with Tomato Sauce

A delicious pasta dish with a long-simmered tomato sauce, typical of the Molise region.

Ingredients
- 500g of sagne
- 600g of ripe tomatoes
- 2 onions
- 2 cloves of garlic
- 2 tablespoons of olive oil
- 1 tablespoon of cane sugar
- 1 teaspoon of salt
- 1 teaspoon of red pepper flakes
- 1 bottle of red wine
- 100g of fresh basil
- Water for cooking the pasta
Method
- In a pan, cook the tomatoes with a little water and a tablespoon of salt for 10 minutes. Then remove the tomatoes, break them into pieces, and pass the sauce through a sieve.
- In a pot, sauté the garlic and onions in a tablespoon of oil, then add the tomato sauce and red wine, stirring well.
- Bring to a boil and reduce the heat, let it simmer for 30 minutes, adding sugar and red pepper flakes to taste.
- Cook the pasta al dente in salted water.
- Add the fresh basil to the sauce and mix well, then serve the pasta with the tomato sauce.
- Serve immediately to enjoy the perfect taste.
