Ingredients

  • 500g of pasta
  • 400g of ripe tomatoes
  • 2 potatoes
  • 100g of capers
  • 2 onions
  • 200ml of olive oil
  • 2 tablespoons of vinegar
  • 100g of mozzarella
  • salt and pepper to taste
  • 100g of fresh basil

Method

  1. Clean and chop the tomatoes, potatoes, and onions.
  2. Make the potato broth: cut the potatoes into cubes, salt them, and cook in boiling water for 10 minutes, then drain and let cool.
  3. In a pan, sauté the onions in olive oil, then add the tomatoes and cook over medium heat for 20 minutes.
  4. Add the capers and vinegar, cook for another 10 minutes.
  5. In a pot, cook the pasta al dente, drain, and mix with the sauce.
  6. Add the mozzarella and fresh basil, mix well.
  7. Serve hot, with salt and pepper to taste.

The story

Pasta alla Norma is said to have originated in Palermo, where the rich and the poor would dine together. The original recipe was simple, but today it is recognized as a culinary masterpiece.
