Ingredients

  • 500 g of artichokes
  • 200 g of cooked ham
  • 100 g of butter
  • 50 g of sugar
  • 100 g of flour
  • 100 ml of white wine
  • 50 ml of water
  • salt and pepper to taste
  • 2 eggs

Method

  1. Clean the artichokes thoroughly, halve them, and cook them for 15 minutes in salted water.
  2. Blanch the artichoke petals for 2 minutes, then cool them under cold water.
  3. In a pan, melt the butter and sauté the chopped cooked ham.
  4. Add the flour and stir well to form a sauce.
  5. Pour in the white wine and water, bring to a boil and simmer for 5 minutes.
  6. Add the artichoke petals, sugar, salt, and pepper, and cook for another 10 minutes.
  7. In a bowl, mix the eggs and artichoke sauce to create a cream.
  8. Serve hot, garnished with slices of cooked ham.

The story

This dish originated in Pescara, Abruzzo, and is said to have been created by the local pope, hence the name.
