Ingredients

  • 400 g fava beans
  • 200 g flour
  • 100 g extra virgin olive oil
  • 1 egg
  • 1 tablespoon salt
  • Water for cooking
  • Oil for frying

Method

  1. Cook the fava beans in salted water for 2-3 hours, then drain and let cool.
  2. Rinse the beans and pass them through a food mill to obtain a smooth pulp.
  3. In a bowl, mix the bean pulp, flour, oil, egg, and salt until you get a homogeneous paste.
  4. Form the panelle with your hands, creating crusts about 2 cm thick.
  5. Fry the panelle in hot oil at 180°C for 3-4 minutes, until they become crispy.
  6. Drain the panelle on paper towels and serve hot.

Panelle originated in Bari, Puglia, and have become a symbol of local cuisine, often served as a snack.
