Panelle are crispy and flavorful fried fava bean fritters, typical of Puglia.

Ingredients
- 400 g fava beans
- 200 g flour
- 100 g extra virgin olive oil
- 1 egg
- 1 tablespoon salt
- Water for cooking
- Oil for frying
Method
- Cook the fava beans in salted water for 2-3 hours, then drain and let cool.
- Rinse the beans and pass them through a food mill to obtain a smooth pulp.
- In a bowl, mix the bean pulp, flour, oil, egg, and salt until you get a homogeneous paste.
- Form the panelle with your hands, creating crusts about 2 cm thick.
- Fry the panelle in hot oil at 180°C for 3-4 minutes, until they become crispy.
- Drain the panelle on paper towels and serve hot.
The story
Panelle originated in Bari, Puglia, and have become a symbol of local cuisine, often served as a snack.
