Ingredients

  • 500g raw pork pancetta
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped rosemary
  • 1 tablespoon extra virgin olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tablespoon sugar
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1 bay leaf

Method

  1. Cut the pancetta into thin slices, about 1 cm thick.
  2. In a bowl, mix the salt, pepper, parsley, and rosemary.
  3. Dip the pancetta slices in the olive oil and bake for 10 minutes at 180°C.
  4. In a pan, sauté the onion and garlic initially with the salt and pepper.
  5. Add the pancetta slices and cook over medium heat for 15-20 minutes, stirring occasionally.
  6. Finally, add the sugar and balsamic vinegar, stir well and continue cooking for another 5-10 minutes.
  7. Remove from the oven and add the bay leaf, stir and serve immediately.
