Ingredients

  • 4 beef heads
  • 600 g beef bones
  • 1 liter beef broth
  • 2 onions
  • 2 carrots
  • 2 cucumbers
  • 2 garlic cloves
  • 1 chili pepper
  • 2 mint leaves
  • 200 g potatoes
  • 100 g zucchini
  • Salt and pepper to taste

Method

  1. Rinse the beef heads and bones thoroughly, then simmer them in salty water for 1 hour to remove the fatty smell.
  2. In a large pot, add the beef broth, beef heads, bones, and remaining water. Bring to a boil and simmer for 3 hours on medium heat.
  3. Chop the onions, carrots, and cucumbers into pieces. Add to the broth along with the garlic and chili pepper.
  4. Add the potatoes, zucchini, and mint leaves. Continue to simmer for 1 hour on low heat.
  5. Blend the beef heads and bones with a mixer and add them back to the broth. Adjust the salt and pepper.
  6. Let the soup cool and serve it hot with a dash of chili powder.
