Oxtail Soup from Kingston

A traditional Kingston oxtail soup, rich in flavor and nutrients, made with beef heads.

Ingredients
- 4 beef heads
- 600 g beef bones
- 1 liter beef broth
- 2 onions
- 2 carrots
- 2 cucumbers
- 2 garlic cloves
- 1 chili pepper
- 2 mint leaves
- 200 g potatoes
- 100 g zucchini
- Salt and pepper to taste
Method
- Rinse the beef heads and bones thoroughly, then simmer them in salty water for 1 hour to remove the fatty smell.
- In a large pot, add the beef broth, beef heads, bones, and remaining water. Bring to a boil and simmer for 3 hours on medium heat.
- Chop the onions, carrots, and cucumbers into pieces. Add to the broth along with the garlic and chili pepper.
- Add the potatoes, zucchini, and mint leaves. Continue to simmer for 1 hour on low heat.
- Blend the beef heads and bones with a mixer and add them back to the broth. Adjust the salt and pepper.
- Let the soup cool and serve it hot with a dash of chili powder.
