A delicious Ostrich fillet dish with a spicy pepper sauce, typical of the Oudtshoorn region in South Africa.

Ingredients
- 4 ostrich fillets
- 100 ml of olive oil
- 2 onions, chopped
- 2 garlic cloves, crushed
- 100 ml of red wine
- 50 ml of lemon juice
- 100 g of dried red peppers, chopped
- 50 g of butter
- Salt and pepper to taste
- 1 tablespoon of balsamic vinegar
- Chopped parsley for serving
Method
- Season the ostrich fillets with a pinch of salt and pepper.
- Fry the fillets in a pan with olive oil until well cooked.
- In a second pan, sauté the onions and garlic in a little olive oil.
- Add the red wine and let it reduce for a few minutes.
- Add the chopped dried red peppers and lemon juice, bring to a boil.
- Reduce the sauce with a little water if needed, add the butter and let it cool.
- Serve the ostrich fillets hot with the pepper sauce.
- Sprinkle chopped parsley over the plate for decoration.
