Ingredients

  • 200g basmati rice
  • 500ml water
  • 1 tablespoon salt
  • 100ml coconut oil
  • 1 onion
  • 1 chili
  • 200g shrimp
  • 1 tablespoon sambal
  • 1 tablespoon rice vinegar

Method

  1. Rinse the basmati rice and let it sit for 30 minutes. In a pot, bring water and salt to a boil, then add the rice and cook for 15-20 minutes or until the rice is al dente.
  2. In a pan, heat the coconut oil and sauté the onion and chili until golden.
  3. Add the shrimp and cook for 3-4 minutes or until they turn red and are cooked.
  4. In a bowl, place the rice and add the sambal and rice vinegar. Mix well.
  5. Serve the rice with the shrimp on top and drizzle with the onion and chili sauté.
  6. Nasi lemak is ready to be enjoyed!

The story

Nasi lemak has ancient roots and traces back to Malay traditions where rice was a staple food for a long time. Today, it has become a national symbol of Malaysia.
