Ingredients

  • 250 g basmati rice
  • 300 ml chicken broth
  • 1 onion
  • 2 garlic cloves
  • 200 g beef
  • 200 g swordfish
  • 100 g mixed vegetables (zucchini, bell peppers, onions)
  • 100 g chicken
  • 2 tablespoons coconut oil
  • 1 tablespoon chili
  • 1 tablespoon ginger
  • 1 teaspoon coriander

Method

  1. In a pot, cook the basmati rice with chicken broth according to package instructions.
  2. In a pan, sauté the onion and garlic in coconut oil.
  3. Add the beef and chicken, cook until well done.
  4. In another pan, cook the swordfish and vegetables until soft.
  5. Add the chili, ginger, and coriander to the pan with the fish and vegetables, mix well.
  6. Serve the hot rice with the various meat, fish, and vegetable curries on top.
  7. Nasi Kandar is ready to be enjoyed!

The story

Originating in the 18th century, Nasi Kandar traces its roots to when Indian merchants and their families settled in Penang, bringing their culinary traditions with them.
