Ingredients

  • 250 g of rice
  • 2 chickens, cut into pieces
  • 1 liter of chicken broth
  • 1 onion, chopped
  • 1 chili, chopped
  • 1/2 cup of soy sauce
  • 1/2 cup of coconut oil
  • 2 garlic cloves, chopped
  • 1/2 cup of rice vinegar
  • 1/2 cup of tomato sauce
  • 1/2 cup of ginger, grated
  • 1/2 cup of red onion, chopped

Method

  1. In a pot, cook the chicken pieces in a bit of coconut oil until well done.
  2. Add the garlic, onion, and chili, sauté for a few minutes.
  3. Pour in the chicken broth and bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Meanwhile, in another pot, sprinkle the rice with rice vinegar and let it rest for 5 minutes.
  5. In a frying pan, heat the coconut oil and add the rice, fry for 2-3 minutes.
  6. Add the soy sauce, ginger, and tomato sauce, stir well and cook for 5 minutes.
  7. Serve the rice in a bowl, cover with the chicken broth with the chicken pieces and garnish with red onion.
