Nasi Briyani Mutton

A succulent mutton dish cooked with rice and spices, typical of the Malay cuisine in Kuala Lumpur.

Ingredients
- 400g of mutton, cut into pieces
- 200g of basmati rice
- 200ml of meat broth
- 1 tablespoon of black pepper, ground
- 1 tablespoon of coriander
- 1 tablespoon of cardamom powder
- 1 tablespoon of cumin powder
- 1 tablespoon of cinnamon sticks
- 1 large onion, chopped
- 200ml of sesame oil
- 1 lemon, sugar and water for saffron powder
Method
- In a pan, heat the sesame oil and chopped onion. Sauté until the onion turns golden.
- Add the mutton and cook for 10 minutes, adding the meat broth and spices. Stir well.
- Bring to a boil, cover and simmer over medium heat for 30 minutes.
- Meanwhile, in another pan, cook the rice with water and sugar for 10 minutes.
- Transfer the rice to the pan with the meat, stir and cook for another 10 minutes.
- Finally, add the lemon juice and saffron powder, stir and serve immediately.
- Serving suggestion: serve with a dollop of sweet yogurt and a salad of vegetables.
