Mussels with Fennel
A Bluff, New Zealand dish where mussels are combined with fennel to create a unique and flavorful taste.

Ingredients
- 500 grams of fresh mussels
- 2 fennel bulbs
- 2 onions
- 2 garlic cloves
- 200 ml white wine
- 100 ml fish broth
- 2 tablespoons olive oil
- salt and pepper to taste
- 100 grams chopped parsley
Method
- Rinse the mussels thoroughly and let them sit in water for a bit before cooking.
- Slice the fennel and mince the garlic.
- In a very hot pan, sauté the garlic and onions in olive oil.
- Add the fennel pieces and sauté for a couple of minutes.
- Add the mussels, pour in the white wine and fish broth, cover, and cook over high heat for 5-7 minutes.
- Strain the mussels and add the chopped parsley.
- Serve immediately.
