Ingredients

  • 500 grams of fresh mussels
  • 2 fennel bulbs
  • 2 onions
  • 2 garlic cloves
  • 200 ml white wine
  • 100 ml fish broth
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 100 grams chopped parsley

Method

  1. Rinse the mussels thoroughly and let them sit in water for a bit before cooking.
  2. Slice the fennel and mince the garlic.
  3. In a very hot pan, sauté the garlic and onions in olive oil.
  4. Add the fennel pieces and sauté for a couple of minutes.
  5. Add the mussels, pour in the white wine and fish broth, cover, and cook over high heat for 5-7 minutes.
  6. Strain the mussels and add the chopped parsley.
  7. Serve immediately.
