Mujaddara

A traditional Israeli dish combining rice and lentils in a light sauce, perfect for a warm and nourishing meal.

Ingredients
- 200g of brown lentils
- 150g of rice
- 1 medium onion
- 2 dried dates
- 200ml of water
- 200ml of vegetable broth
- 1 teaspoon of saffron powder
- Salt and pepper to taste
- Olive oil for frying
Method
- In a pot, fry the olive oil and onion until golden.
- Add the brown lentils and cook for 5 minutes.
- Pour in the water and vegetable broth, add saffron and salt, bring to a boil and simmer for 20-25 minutes.
- In another pot, fry the olive oil and onion until golden.
- Add the rice and fry for 2-3 minutes.
- Pour in the water and vegetable broth, add salt and pepper, bring to a boil and simmer for 15-20 minutes.
- Add the dried dates during the last 5 minutes of cooking.
- Serve the mujaddara hot, with a bit of the sauce over the lentils and rice.
