Ingredients

  • 200g of brown lentils
  • 150g of rice
  • 1 medium onion
  • 2 dried dates
  • 200ml of water
  • 200ml of vegetable broth
  • 1 teaspoon of saffron powder
  • Salt and pepper to taste
  • Olive oil for frying

Method

  1. In a pot, fry the olive oil and onion until golden.
  2. Add the brown lentils and cook for 5 minutes.
  3. Pour in the water and vegetable broth, add saffron and salt, bring to a boil and simmer for 20-25 minutes.
  4. In another pot, fry the olive oil and onion until golden.
  5. Add the rice and fry for 2-3 minutes.
  6. Pour in the water and vegetable broth, add salt and pepper, bring to a boil and simmer for 15-20 minutes.
  7. Add the dried dates during the last 5 minutes of cooking.
  8. Serve the mujaddara hot, with a bit of the sauce over the lentils and rice.
