Ingredients

  • 200g of soybeans
  • 200g of rice
  • 1 large onion
  • 2 dates
  • 300ml of water
  • 2 tablespoons of olive oil
  • Salt to taste
  • 1 tablespoon of sugar
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander

Method

  1. In a pot, sauté the chopped onion in olive oil until golden brown.
  2. Add the soybeans and water, bring to a boil and simmer on medium heat for 30-40 minutes or until the beans are tender.
  3. While the beans are cooking, rinse the rice and drain it.
  4. In a pan, sauté the finely chopped onion in olive oil, add the rice and cook for 2-3 minutes.
  5. Add the water, salt, sugar, cumin, and coriander, mix well and cook on medium heat for 15-20 minutes or until the rice is done.
  6. Finally, add the chopped dates to the beans and mix well.
  7. Serve hot, accompanied by Arabic bread.

The story

Mujadara is an ancient dish known throughout the Gulf region, but it is particularly popular in Riyadh, where it is considered a family dish.
