A traditional Saudi dish that combines rice and lentils in a delicious roasted blend.

Ingredients
- 200g of soybeans
- 200g of rice
- 1 large onion
- 2 dates
- 300ml of water
- 2 tablespoons of olive oil
- Salt to taste
- 1 tablespoon of sugar
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
Method
- In a pot, sauté the chopped onion in olive oil until golden brown.
- Add the soybeans and water, bring to a boil and simmer on medium heat for 30-40 minutes or until the beans are tender.
- While the beans are cooking, rinse the rice and drain it.
- In a pan, sauté the finely chopped onion in olive oil, add the rice and cook for 2-3 minutes.
- Add the water, salt, sugar, cumin, and coriander, mix well and cook on medium heat for 15-20 minutes or until the rice is done.
- Finally, add the chopped dates to the beans and mix well.
- Serve hot, accompanied by Arabic bread.
The story
Mujadara is an ancient dish known throughout the Gulf region, but it is particularly popular in Riyadh, where it is considered a family dish.
