A delicious, sweet and aromatic lamb tagine, traditionally served in Tangier for special occasions.

Ingredients

  • 400 g of lamb cut into pieces
  • 200 ml of olive oil
  • 2 onions
  • 2 garlic cloves
  • 1 teaspoon of red pepper
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of sugar
  • 100 g of almonds
  • 100 g of raisins
  • 100 g of honey
  • 1 liter of beef broth
  • salt to taste

Method

  1. In a large pot, sauté the onions and garlic in olive oil, then add the red pepper and black pepper.
  2. Add the lamb pieces and cook for 10 minutes.
  3. In another pot, mix the beef broth, sugar, honey, and salt.
  4. Combine the meat broth with the lamb and let it simmer for 20 minutes.
  5. Add the chopped almonds and raisins, and cook for another 10 minutes.
  6. Serve hot, garnished with whole almonds.
