Mrouzia (Lamb Tagine with Honey, Almonds, and Raisins)

A delicious, sweet and aromatic lamb tagine, traditionally served in Tangier for special occasions.

Ingredients
- 400 g of lamb cut into pieces
- 200 ml of olive oil
- 2 onions
- 2 garlic cloves
- 1 teaspoon of red pepper
- 1/2 teaspoon of black pepper
- 1 teaspoon of sugar
- 100 g of almonds
- 100 g of raisins
- 100 g of honey
- 1 liter of beef broth
- salt to taste
Method
- In a large pot, sauté the onions and garlic in olive oil, then add the red pepper and black pepper.
- Add the lamb pieces and cook for 10 minutes.
- In another pot, mix the beef broth, sugar, honey, and salt.
- Combine the meat broth with the lamb and let it simmer for 20 minutes.
- Add the chopped almonds and raisins, and cook for another 10 minutes.
- Serve hot, garnished with whole almonds.
