Ingredients

  • 500 g of lamb, cut into pieces
  • 2 carrots, sliced
  • 2 onions, sliced
  • 1 zucchini, cut into pieces
  • 1 red onion, cubed
  • 3 ripe tomatoes, cut into pieces
  • 1 teaspoon of ginger
  • 2 dates
  • 1 teaspoon of cayenne pepper
  • 1 teaspoon of cinnamon powder
  • 1 teaspoon of cardamom powder
  • 1 teaspoon of coriander powder
  • 1 liter of meat broth

Method

  1. In a large pot, heat some oil and add the lamb pieces, cooking over medium heat until the meat is well cooked.
  2. Add the carrots, onions, and garlic, cooking for another 5 minutes.
  3. Add the meat broth, spices, and tomatoes, stir well and bring to a boil.
  4. Reduce the heat, cover, and let it simmer for 1 hour or until the meat is tender.
  5. Add the zucchini and dates, stir well and let it cook for another 15 minutes.
  6. Serving, add a bit of cream if you want a creamier stew.
