Ingredients
- 4 rabbits
- 2 onions
- 1 chili pepper
- 2 tablespoons of preserved chickpeas
- 1 tablespoon of saffron
- 2 tablespoons of olive oil
- 1 liter of water
- 1 tablespoon of salt
- 1 tablespoon of chili powder
- 1 tablespoon of cumin
- 1 tablespoon of coriander
- 1 tablespoon of bay leaves
Method
- Clean and cut the rabbits into pieces of about 2x2 cm.
- In a pan, sauté the onions and chili pepper in olive oil.
- Add the rabbit pieces and cook for 10 minutes.
- Pour in the water, salt, chili powder, cumin, coriander, and bay leaves.
- Bring to a boil, cover, and simmer on low heat for 1 hour.
- Add the preserved chickpeas and saffron, stir well.
- Continue cooking for 30 minutes until the rabbit is tender.
- Serve hot with the saffron flavor.
The story
The Moroccan rabbit from Guelmim has been prepared for generations in the coastal cities of Guelmim, where rabbit was a common prey, and traditional marinades were used to preserve it.
