Ingredients

  • 4 rabbits
  • 2 onions
  • 1 chili pepper
  • 2 tablespoons of preserved chickpeas
  • 1 tablespoon of saffron
  • 2 tablespoons of olive oil
  • 1 liter of water
  • 1 tablespoon of salt
  • 1 tablespoon of chili powder
  • 1 tablespoon of cumin
  • 1 tablespoon of coriander
  • 1 tablespoon of bay leaves

Method

  1. Clean and cut the rabbits into pieces of about 2x2 cm.
  2. In a pan, sauté the onions and chili pepper in olive oil.
  3. Add the rabbit pieces and cook for 10 minutes.
  4. Pour in the water, salt, chili powder, cumin, coriander, and bay leaves.
  5. Bring to a boil, cover, and simmer on low heat for 1 hour.
  6. Add the preserved chickpeas and saffron, stir well.
  7. Continue cooking for 30 minutes until the rabbit is tender.
  8. Serve hot with the saffron flavor.
