Moroccan Chakchouka
A delicious and spicy egg and vegetable stew, a traditional dish from Tunisia.

Ingredients
- 4 eggs
- 1 onion
- 2 tomatoes
- 1 bell pepper
- 1 zucchini
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon coriander
- 1/2 teaspoon cumin
- 1/2 teaspoon ginger powder
- Enough water
Method
- In a non-stick pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 2 minutes.
- Add the tomatoes, bell pepper, and zucchini, stir well and cook for another 5-7 minutes until the vegetables start to soften.
- Add the cayenne pepper, coriander, cumin, and ginger powder, stir well and cook for another 2 minutes.
- In a bowl, crack the eggs and beat with a little salt and pepper. Slowly pour the eggs into the pan with the vegetables, stirring gently.
- Cover the pan and cook over medium-high heat for 5-7 minutes until the eggs are cooked and the vegetables are tender.
- Serve the chakchouka hot in a bowl, adding a bit of salt and pepper to taste.
