Ingredients

  • 4 eggs
  • 1 onion
  • 2 tomatoes
  • 1 bell pepper
  • 1 zucchini
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ginger powder
  • Enough water

Method

  1. In a non-stick pan, heat the olive oil over medium heat. Add the chopped onion and sauté for 2 minutes.
  2. Add the tomatoes, bell pepper, and zucchini, stir well and cook for another 5-7 minutes until the vegetables start to soften.
  3. Add the cayenne pepper, coriander, cumin, and ginger powder, stir well and cook for another 2 minutes.
  4. In a bowl, crack the eggs and beat with a little salt and pepper. Slowly pour the eggs into the pan with the vegetables, stirring gently.
  5. Cover the pan and cook over medium-high heat for 5-7 minutes until the eggs are cooked and the vegetables are tender.
  6. Serve the chakchouka hot in a bowl, adding a bit of salt and pepper to taste.
