Modak

These sweet dumplings of rice and spun sugar are a masterpiece of Indian cuisine, especially cherished during religious festivals.

Ingredients
- 300g glutinous rice
- 250ml whole milk
- 100g granulated sugar
- 1 teaspoon ground cardamom
- 400g all-purpose flour (maida)
- vegetable oil for greasing the mold
- 250ml water
Method
- Cook the glutinous rice in water for about 30 minutes until tender. Let it cool.
- In a pan, heat milk and add granulated sugar and ground cardamom. Cook for about 15 minutes or until the mixture thickens slightly.
- Mix water with all-purpose flour in a bowl to form a smooth dough without lumps. Cover with a damp cloth for around 15 minutes.
- Divide cooked rice and sweet filling into small portions.
- Shape the dough into walnut-sized balls, press one half flat with your fingers, place some of the filling on it, then close to form the traditional modak shape.
- Lightly grease a steamer or muffin tray and steam the modaks for about 15-20 minutes.
The story
Modak is a sacred dish in India, especially dear to devotees of the god Ganesha. Hailing from the region of Maharashtra, it is prepared during the festival of Ganesh Chaturthi to honor the god of wisdom and beginnings.
