Mloukhieh
A verdant soup made with coriander leaves and rice, perfect for a cold winter.

Ingredients
- 250 g of coriander leaves
- 200 g of rice
- 2 liters of meat broth
- 3 onions
- 2 dates
- 2 teaspoons of saffron
- 4 tablespoons of olive oil
- Salt and pepper to taste
- 1 teaspoon of red wine vinegar
Method
- In a large pot, heat the olive oil and sauté the finely chopped onion and garlic.
- Add the sliced dates and cook for a few minutes.
- Add the coriander leaves and cook for another minute.
- Pour in the meat broth and bring to a boil, then reduce the heat and simmer for 30 minutes.
- Add the rice and cook for an additional 15 minutes, or until the rice is al dente.
- Finally, add the salt, pepper, and red wine vinegar and stir well.
- Let it cool for a moment before serving.
