Ingredients

  • 250 g of coriander leaves
  • 200 g of rice
  • 2 liters of meat broth
  • 3 onions
  • 2 dates
  • 2 teaspoons of saffron
  • 4 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of red wine vinegar

Method

  1. In a large pot, heat the olive oil and sauté the finely chopped onion and garlic.
  2. Add the sliced dates and cook for a few minutes.
  3. Add the coriander leaves and cook for another minute.
  4. Pour in the meat broth and bring to a boil, then reduce the heat and simmer for 30 minutes.
  5. Add the rice and cook for an additional 15 minutes, or until the rice is al dente.
  6. Finally, add the salt, pepper, and red wine vinegar and stir well.
  7. Let it cool for a moment before serving.
