Mitarra' is a delicious homemade pasta, crunchy on the outside and soft on the inside, traditionally served with a rich tomato sauce.

Ingredients
- 250 grams of flour
- 3 eggs
- 1 tablespoon of olive oil
- Salt to taste
- 300 grams of ripe tomatoes
- 50 grams of onion
- 50 grams of parsley
- 1 tablespoon of vinegar
- Salt and pepper to taste
Method
- In a bowl, mix the flour with a little water and a pinch of salt. Add the eggs and mix until you get a homogeneous dough.
- Make a cross in the middle of the dough and divide it into two parts. Flatten each part with a damp cloth.
- Cook the tomatoes in a pan with a little olive oil, salt, and pepper. Finely chop them.
- In a frying pan, sauté the onion and garlic. Add the chopped tomatoes and parsley. Cook on medium heat for 15-20 minutes, adding a little water occasionally.
- Prepare the flattened dough and cut it into thin strips. Cook the strips in salted water for 2-3 minutes.
- Serve the mitarra' in a warm plate, covered with the rich tomato sauce.
- Season with salt and pepper to taste.
