Minestrone
A hearty and nutritious soup made with various vegetables and beans, perfect for a cold winter.

Ingredients
- 500g of zucchini
- 300g of tomatoes
- 200g of beans
- 1 onion
- 2 carrots
- 2 celery stalks
- 1 zucchini
- 200g of lentils
- 2 liters of bean broth
- 100g of lard or olive oil
- salt and pepper to taste
- 100g of lentils
Method
- In a large pot, sauté the oil and finely chopped onion.
- Add the onion, carrots, celery, and zucchini, sauté for 5 minutes.
- Add the peeled tomatoes and beans, cook for 10 minutes.
- Add the bean broth, lentils, and beans, bring to a boil.
- Cook for 20-30 minutes, adding salt and pepper to taste.
- Serve hot, with a sprinkle of grated lard on top.

Minestrone is an Italian tradition with roots dating back to the Middle Ages, when farmers used every part of their garden or poultry for a hearty soup.
