Ingredients

  • 4 beef cutlets
  • 250 g of torn bread
  • 1 egg
  • 100 g of bread crumbs
  • 2 tablespoons of olive oil
  • 1 tablespoon of salt
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of nutmeg
  • French fries and salad to taste

Method

  1. Prepare the beef cutlets, slice them into thick pieces and let them rest in the refrigerator.
  2. Crumb the bread in a container and add the oil, salt, pepper, and nutmeg.
  3. Beat the egg in another bowl.
  4. Dredge the cutlets first in the crumb mixture, then in the egg, and finally in the bread crumbs.
  5. Fry the cutlets in a pan with hot oil until golden.
  6. Serve immediately with French fries and salad.

The story

Cotoletta alla Milanese originated in the 19th century as a local version of Viennese cutlet, but it became a culinary symbol of Milan due to its simplicity and the quality of its ingredients.
