Ingredients

  • 200g of thin rice noodles
  • 150g of prawns
  • 2 onions
  • 2 cloves of garlic
  • 1 lemon
  • 2 tablespoons of coconut oil
  • 1 liter of chicken broth
  • 1 tablespoon of chili paste
  • 1 tablespoon of soy sauce
  • Salt and pepper to taste
  • 1 tablespoon of coriander
  • Chopped cilantro for serving

Method

  1. In a pot, heat the coconut oil and sauté the garlic and onions until golden brown.
  2. Add the prawns and cook for 2-3 minutes, then pour in the chicken broth and bring to a boil.
  3. In another bowl, mix the chili paste, soy sauce, salt, and pepper.
  4. Add the thin rice noodles to the broth and cook for 5-7 minutes or until the noodles are al dente.
  5. Pour the chili mixture into the soup and stir well.
  6. Serve the soup in bowls and garnish with coriander and chopped cilantro.
