A delicious Tunisian specialty made with vegetables and bread, traditionally prepared during the Tozeur festivals.

Ingredients

  • 200g of Tuscan bread cut into cubes
  • 500g of zucchini cut into slices
  • 200g of ripe tomatoes cut into slices
  • 1 medium onion cut into cubes
  • 2 garlic cloves
  • 100g of feta cheese
  • 50g of chopped parsley
  • extra virgin olive oil
  • salt and pepper to taste
  • 1 whole egg

Method

  1. In a pan, sauté the garlic and onion in a bit of extra virgin olive oil.
  2. Add the tomatoes and cook for 10 minutes, stirring often.
  3. In another pan, fry the zucchini slices in olive oil.
  4. In a bowl, mix the bread, feta, parsley, oil, salt, and pepper.
  5. Add the fried zucchini and sautéed tomatoes, mix well.
  6. In a baking dish, place the mixture and add the whole egg.
  7. Bake in the oven at 180°C for 20-25 minutes, until the surface is golden.
