Ingredients

  • 2 kg of beef cut into cubes
  • 1 kg of Arabic rice
  • 1 kg of mixed vegetables (tomatoes, onions, zucchini, pumpkin)
  • 2 liters of beef broth
  • 3 tablespoons of olive oil
  • 1 teaspoon of sugar
  • 1 teaspoon of red pepper
  • Salt to taste
  • 3 eggs
  • 2 tablespoons of fresh mint
  • 2 tablespoons of prunes
  • 2 tablespoons of apple cider vinegar

Method

  1. In a large pot, simmer the beef with the beef broth, olive oil, sugar, red pepper, and salt for 1-2 hours, until the beef is tender.
  2. Meanwhile, wash and chop the vegetables into pieces.
  3. In a pan, sauté the vegetables with olive oil for 10-15 minutes, until they are soft.
  4. In a large bowl, mix the rice with the vegetables, beef, remaining broth, olive oil, sugar, red pepper, and salt.
  5. Add the eggs, mint, prunes, and apple cider vinegar, mix well, and let it rest for 30 minutes.
  6. In a large casserole, arrange the rice and vegetables, cover with the beef and cover with a lid.
  7. Cook on low heat for 1-2 hours, until the rice is soft and the beef is fully absorbed by the broth.

The story

Maqluba is an ancient recipe with roots in Arab cuisine, particularly popular in the Jeddah region. The name in Arabic means 'upside down,' referring to the presentation of the dish.
