Mansaf is a traditional Syrian-Amman dish, rich in history and a symbol of celebration and hospitality.

Ingredients
- 2 kg of beef, cut into pieces
- 2 liters of meat broth
- 1 kg of roasted beef, cut into pieces
- 1 kg of cooked beef, cut into pieces
- 1 kg of vermicelli
- 200 grams of almonds
- 100 grams of sugar
- 100 grams of cinnamon powder
- 100 grams of macadamia nuts
- 500 ml of oil
- Salt and pepper to taste
- Za'atar (a blend of herbs) to taste
Method
- In a pot, simmer the beef with the broth for at least 2 hours, until the beef is tender.
- Toast the almonds in a pan with oil until golden.
- In another pan, mix the sugar, cinnamon, and macadamia nuts to create the sauce.
- In a large pot, cook the vermicelli in salted water until al dente.
- Combine the cooked beef, roasted beef, and almond sauce in a large pot and simmer for 30 minutes.
- Serve the beef in a warm dish, topped with vermicelli and sauce, and garnish with the nut sauce.
