A crunchy and tender polenta, served with butter and cheese, a classic of Odessa's Ukrainian cuisine.

Ingredients
- 500 g of cornmeal
- 750 ml of milk
- 500 ml of water
- 1 tablespoon of butter
- 1 tablespoon of sugar
- 1/2 teaspoon of salt
- 100 g of grated cheese
- 1 tablespoon of olive oil
- 1 onion
Method
- In a pot, bring the milk and water to a boil, then gradually add the cornmeal while continuously stirring.
- Continue to add the cornmeal, stirring constantly, until you get a smooth and homogeneous polenta.
- Add the butter, salt, and sugar, stirring well.
- Cover the pot and cook on low heat for about 30 minutes, stirring occasionally.
- In another pan, sauté the olive oil with finely chopped onion and garlic.
- Add the warm polenta to the pan with the sautéed onion and garlic, stirring well.
- Serve immediately hot, garnished with grated cheese.
