Ingredients

  • 200 ml of almond milk
  • 100 g of sugar
  • 1 tablespoon of saffron powder
  • 1 tablespoon of water
  • 2 tablespoons of gelatin powder
  • 1 liter of milk
  • 1 tablespoon of vanilla powder
  • 1 tablespoon of cocoa powder (optional)
  • Whipped cream in sufficient quantity to decorate
  • Cocoa powder for decoration

Method

  1. In a bowl, mix the almond milk, sugar, and saffron powder with a little water. Stir well.
  2. In another bowl, mix the gelatin with a little cold water until it is completely dissolved.
  3. In a pan, bring the milk to a boil, then add the vanilla and cocoa (if used). Stir well.
  4. Meanwhile, pour the almond milk with sugar and saffron into a bowl and stir.
  5. When the milk is boiling, pour it slowly into the almond milk, stirring continuously to avoid forming lumps.
  6. Add the dissolved gelatin and stir until the mixture has cooled and thickened.
  7. Pour the malabi into dessert dishes or glasses and refrigerate for at least 2 hours.
  8. Before serving, decorate with whipped cream and a light dusting of cocoa powder.
  9. Serve cold.

The story

Originating from the Middle East, malabi has spread to Israel, where it has become a popular dessert. It is believed to have been brought to Israel by Turkish-Egyptian merchants in the 19th century.
