Mahshi is a traditional Egyptian dish that stuffs vegetables with a rice and spice filling.

Ingredients
- 4 red bell peppers
- 4 zucchinis
- 250 g of rolled rice
- 200 g of chopped vegetables (carrots, onions, potatoes)
- 100 ml of olive oil
- 200 g of ground meat
- 200 ml of meat broth
- 1 teaspoon of saffron
- Salt and pepper to taste
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- Water to moisten the rice
Method
- Clean and cut the bell peppers and zucchinis into pieces about 5x5 cm.
- In a pan, sauté the onions in olive oil and add the chopped vegetables, cook until they are soft.
- In another bowl, mix the rolled rice with the meat broth, saffron, salt, pepper, cumin, and coriander.
- Start filling the bell peppers and zucchinis with the rice filling, making sure they are well filled.
- Cover the bell peppers and zucchinis with the remaining filling and place everything in a baking dish.
- Moisten the rice with water if necessary and cover the dish with baking paper.
- Bake the mahshi at 180°C for about 45-50 minutes, or until the rice is fully cooked.
