Ingredients

  • 600 g of beef or veal
  • 2 onions
  • 2 carrots
  • 2 cucumbers
  • 1 red pepper
  • 1 zucchini
  • 1 liter of beef broth
  • 1 teaspoon of chili
  • 1 teaspoon of salt
  • 2 tablespoons of olive oil

Method

  1. Cut the meat into uniform pieces and place them in a pot.
  2. Add the olive oil and sliced onions, sauté them.
  3. Add the carrots, cucumbers, red pepper, and zucchini, cut into pieces.
  4. Pour in the beef broth and add the chili and salt.
  5. Sprinkle with a little salt and chili, mix well.
  6. Bring to a boil, cover, and simmer on low heat for 2 hours.
  7. Simmer everything together one last time, then turn off the heat and let it rest.

The story

Originating from Saida, the Maghloobah has been a family dish for generations, prepared by covering meat with vegetables and stirring during cooking. The name is said to come from the way the meat is mixed with the vegetables during the cooking process.
