Ingredients
- 4 fish fillets
- 4 sweet potatoes
- 200 g of onions
- 100 g of zucchini
- 100 g of red peppers
- 50 g of capers
- 50 g of almonds
- 200 ml of palm oil
- 100 ml of water
- 50 ml of lemon juice
- 30 g of Guinea pepper
- 10 g of salt
- 10 g of ginger
Method
- Prepare the fish fillets and slice the sweet potatoes into thin rounds.
- In a pan, heat the palm oil and sauté the onions until they turn golden brown.
- Add the red peppers, zucchini, capers, and ginger, sauté for 5 minutes.
- Add the fish fillets and season with lemon juice, salt, and Guinea pepper.
- Cover the fish with the sweet potato slices and cook over medium heat for 20 minutes.
- Finally, add the almonds and serve hot.
