Mackerel and Dumplings from Kingston

A traditional Kingston dish, mackerel roasted with garlic and onions, served with delicious corn dumplings.

Ingredients
- 4 mackerel fillets
- 100g of corn flour
- 100g of all-purpose flour
- 1/2 cup of butter
- 1/2 cup of milk
- 1/2 cup of water
- 1/2 cup of chopped onion
- 1/2 cup of minced garlic
- 1/2 cup of olive oil
- Salt and pepper to taste
- 100g of sliced zucchini
- 100g of sliced carrots
Method
- In a bowl, mix the corn flour and all-purpose flour, then add the butter, milk, and water. Mix until you get a smooth dough.
- In a pan, start sautéing the onions and garlic in olive oil. Add the zucchini and carrots and cook until they are soft.
- In the bowl with the dough, add the vegetables and mix well.
- Preheat the oven to 200°C and put the mackerel on a skewer. Sprinkle the garlic and oil over the mackerel.
- In a pan, cook the dumplings stirring frequently until they are cooked and golden brown.
- Serve the mackerel and dumplings together in a bowl, with a bit of onion and garlic sauce on top.
- It will be a delicious and traditional dish to try.
The story
This dish was brought to Jamaica by English sailors, who used mackerel as provisions during their voyages. Over time, it became a popular dish in Kingston.
