A traditional Kingston dish, mackerel roasted with garlic and onions, served with delicious corn dumplings.

Ingredients

  • 4 mackerel fillets
  • 100g of corn flour
  • 100g of all-purpose flour
  • 1/2 cup of butter
  • 1/2 cup of milk
  • 1/2 cup of water
  • 1/2 cup of chopped onion
  • 1/2 cup of minced garlic
  • 1/2 cup of olive oil
  • Salt and pepper to taste
  • 100g of sliced zucchini
  • 100g of sliced carrots

Method

  1. In a bowl, mix the corn flour and all-purpose flour, then add the butter, milk, and water. Mix until you get a smooth dough.
  2. In a pan, start sautéing the onions and garlic in olive oil. Add the zucchini and carrots and cook until they are soft.
  3. In the bowl with the dough, add the vegetables and mix well.
  4. Preheat the oven to 200°C and put the mackerel on a skewer. Sprinkle the garlic and oil over the mackerel.
  5. In a pan, cook the dumplings stirring frequently until they are cooked and golden brown.
  6. Serve the mackerel and dumplings together in a bowl, with a bit of onion and garlic sauce on top.
  7. It will be a delicious and traditional dish to try.

The story

This dish was brought to Jamaica by English sailors, who used mackerel as provisions during their voyages. Over time, it became a popular dish in Kingston.
