Lomo al Ajillo

A dish of smoked lomo, gently flavored with soft garlic, perfect for a winter lunch.

Ingredients
- 200g of smoked lomo
- 4-6 garlic cloves
- 1 tablespoon of extra virgin olive oil
- 1 tablespoon of soy sauce
- 1 tablespoon of balsamic vinegar
- Salt and pepper to taste
- 100g of toasted bread slices
- 100g of grated cheese
Method
- Slice the smoked lomo into thick slices and set aside.
- In a pan, sauté the garlic in olive oil until it turns golden.
- Add the smoked lomo to the pan and cook for 2-3 minutes until it becomes slightly golden.
- Add the soy sauce and balsamic vinegar, stirring well.
- Season with salt and pepper to taste.
- Place the toasted bread slices on a plate, add a spoonful of the sauce on the bread, then a slice of smoked lomo and a bit of grated cheese.
- Repeat the operation until you have used all the ingredients.
- Let the dish rest for 5-10 minutes before serving.
