Ingredients

  • 200g of hard wheat bread
  • 400g of potatoes
  • 200g of ghiaietto (wheat flour)
  • 1 onion
  • 1 tablespoon of dried onion
  • 1 chili pepper
  • 1 tablespoon of oil
  • Salt and pepper to taste
  • 1 tablespoon of wine vinegar
  • 1 tablespoon of semolina

Method

  1. Peel and cut the potatoes into cubes, then cook over medium heat until soft.
  2. While the potatoes are cooking, chop the onion and other vegetables and sauté them in a bit of oil.
  3. In a bowl, mix the flour, cooked potatoes, sautéed vegetables, chili pepper, salt, and pepper.
  4. Form the dough into small balls of about 50g each.
  5. Bake the dough balls in a preheated oven at 200°C for 20-25 minutes, until they are crispy.
  6. Prepare the chokha by mixing the potatoes with wine vinegar, oil, and semolina.
  7. Serve the Litti with the chokha and a sprinkle of dried onion powder.
