Lentil Soup

Ingredients
- 200 g of green lentils
- 1 onion
- 2 carrots
- 2 celery stalks
- 2 garlic cloves
- 2 liters of beef broth
- 100 g of lard
- 100 g of beans
- 100 g of bell peppers
- salt and pepper to taste
- 1 tablespoon of olive oil
- 1 tablespoon of chopped parsley
Method
- Rinse the lentils well and cook them in boiling water for 10 minutes, then drain them.
- In a pan, melt the lard in a good amount of olive oil, add the garlic and sauté for 1 minute.
- Add the carrots, celery, and onion, cook for 5 minutes.
- Add the beef broth, lentils, beans, and bell peppers, bring to a boil and cook for 20 minutes.
- Turn off the heat and add salt and pepper to taste. Finally, add the chopped parsley.
- Serve hot.
