A traditional Portuguese dish, Leitão à Bairrada is a delicious whole pig cooked in a pot with herbs and spices.

Ingredients
- 1 whole pig (about 4-5 kg)
- 2 liters of water
- 1 kg of potatoes
- 500 g of carrots
- 500 g of onions
- 200 g of rosemary
- 100 g of laurel
- 100 g of sage
- 500 ml of olive oil
- Salt and pepper to taste
- 1 tablespoon of sea salt
- 1 tablespoon of vinegar
Method
- Take the whole pig and cut the heavier cuts into smaller pieces, but leave the rest intact.
- In a large pot, put the water and the pig, add salt and pepper to taste.
- Cook over medium heat for about 3 hours, checking the water level from time to time.
- Meanwhile, cut the potatoes, carrots, and onions into pieces.
- Add the vegetables to the pot with the pig, along with the rosemary, laurel, and sage.
- Continue cooking for another hour, until the pig is fully cooked and the vegetables are soft.
- Finally, add the olive oil, sea salt, and vinegar, mix well, and let it simmer for a final hour.
- Serve the Leitão à Bairrada hot, accompanied by the vegetables and the sauce.
