Ingredients

  • 500 g of lamb
  • 500 g of potatoes
  • 300 g of carrots
  • 2 onions
  • 2 cloves of garlic
  • 2 tablespoons of olive oil
  • 1 liter of beef broth
  • salt and pepper to taste
  • 1 tablespoon of chopped parsley

Method

  1. Cut the lamb into uniform pieces and set aside.
  2. Peel and cut the potatoes into cubes about 2 cm in size.
  3. Peel the carrots and slice them thinly.
  4. In a large pot, sauté the onions and garlic in olive oil.
  5. Add the carrots and potatoes, stirring well.
  6. Pour in the beef broth and bring to a boil, then reduce heat and simmer for about 45 minutes.
  7. Add the lamb, salt, and pepper to taste, and cook for another 20 minutes.
  8. Turn off the heat, add the chopped parsley, and serve hot.
