Lamb with Dried Lemons and Olives

A traditional Tozeur dish, this succulent lamb is roasted with dried lemons and olives.

Ingredients
- 400 g of goat meat, cut into pieces
- 100 g of green olives, halved
- 100 g of dried lemons, sliced
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of white wine vinegar
- 2 tablespoons of fresh lemon juice
- 1 tablespoon of sugar
- Salt and pepper to taste
- 2 bay leaves
- 2 sprigs of rosemary
Method
- In a bowl, mix the olive oil, white wine vinegar, fresh lemon juice, salt, pepper, sugar, bay leaves, and rosemary.
- In a pan, place the goat meat and pour the marinade over it.
- Add the green olives and the dried lemon slices to the meat and mix well.
- Cover the pan and let it rest for 30 minutes.
- Take a baking dish and place the meat with all the ingredients on top.
- Preheat the oven to 180°C and bake for 1 hour, checking occasionally to ensure the meat does not dry out.
- Serve hot, accompanied by a sweet pumpkin dessert or Tuscan bread.
