Ingredients

  • 400 g of goat meat, cut into pieces
  • 100 g of green olives, halved
  • 100 g of dried lemons, sliced
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of white wine vinegar
  • 2 tablespoons of fresh lemon juice
  • 1 tablespoon of sugar
  • Salt and pepper to taste
  • 2 bay leaves
  • 2 sprigs of rosemary

Method

  1. In a bowl, mix the olive oil, white wine vinegar, fresh lemon juice, salt, pepper, sugar, bay leaves, and rosemary.
  2. In a pan, place the goat meat and pour the marinade over it.
  3. Add the green olives and the dried lemon slices to the meat and mix well.
  4. Cover the pan and let it rest for 30 minutes.
  5. Take a baking dish and place the meat with all the ingredients on top.
  6. Preheat the oven to 180°C and bake for 1 hour, checking occasionally to ensure the meat does not dry out.
  7. Serve hot, accompanied by a sweet pumpkin dessert or Tuscan bread.
