Lamb Tagine with Apricots and Almonds

A traditional Moroccan tagine, rich in flavors and colors, made with lamb, apricots, and almonds.

Ingredients
- 500g of lamb, cut into pieces
- 10 dried apricots, chopped
- 50g of toasted and ground almonds
- 2 onions, chopped
- 2 dates, chopped
- 1 inch of ginger, diced
- 1 teaspoon of black pepper
- 1 teaspoon of cinnamon powder
- 1 teaspoon of cane sugar
- 1 lemon, zested
- 2 tablespoons of olive oil
- 1 liter of meat broth
- salt to taste
Method
- In a large pot, sauté the olive oil with finely chopped onions until they become golden brown.
- Add the lamb, ground almonds, black pepper, cinnamon, and ginger, and sauté for a few minutes.
- Add the chopped dates, chopped dried apricots, cane sugar, and lemon juice.
- Pour in the meat broth and bring to a boil, then reduce the heat and sprinkle with salt.
- Cover and cook on low heat for about 1 hour, checking occasionally and adding water if necessary.
- Serve hot, garnished with the ground almonds.
