Ingredients

  • 500g of lamb, cut into pieces
  • 10 dried apricots, chopped
  • 50g of toasted and ground almonds
  • 2 onions, chopped
  • 2 dates, chopped
  • 1 inch of ginger, diced
  • 1 teaspoon of black pepper
  • 1 teaspoon of cinnamon powder
  • 1 teaspoon of cane sugar
  • 1 lemon, zested
  • 2 tablespoons of olive oil
  • 1 liter of meat broth
  • salt to taste

Method

  1. In a large pot, sauté the olive oil with finely chopped onions until they become golden brown.
  2. Add the lamb, ground almonds, black pepper, cinnamon, and ginger, and sauté for a few minutes.
  3. Add the chopped dates, chopped dried apricots, cane sugar, and lemon juice.
  4. Pour in the meat broth and bring to a boil, then reduce the heat and sprinkle with salt.
  5. Cover and cook on low heat for about 1 hour, checking occasionally and adding water if necessary.
  6. Serve hot, garnished with the ground almonds.
