Lamb and Leek Pie

A delicious lamb and leek pie, typical of the Whangarei region, that warms the heart and satisfies the appetite.

Ingredients
- 2 kg of lamb, cut into pieces
- 400 g of leeks, cut into pieces
- 2 onions, sliced
- 200 g of butter
- 200 ml of beef broth
- 2 eggs
- 300 g of flour
- 200 g of sugar
- 100 g of chopped almonds
- 1 teaspoon of spices
- 1 teaspoon of salt
Method
- In a pan, melt the butter and sauté the onions until golden brown.
- Add the leeks and cook for a few minutes, then add the lamb and cook until it is well done.
- In another pan, mix the beef broth, eggs, flour, sugar, spices, and salt.
- Combine the meat preparation with the sauce and mix well.
- Roll out the pastry dough in a baking dish and pour the preparation into it.
- Sprinkle with caster sugar and chopped almonds.
- Bake in the oven at 180°C for 30-40 minutes, until the surface is golden and the pastry is crispy.
