Kutia is a traditional Ukrainian sweet, rich in barley groats and fruit, enjoyed during Christmas celebrations.

Ingredients

  • 150g barley groats
  • 200g sugar
  • 100ml water
  • 100ml milk
  • 100g almonds
  • 100g dried fruit (raisins, pears, apples)
  • 100g honey
  • 100g currants
  • 100g walnuts
  • 100g cocoa powder
  • 100g cinnamon powder
  • 100g pulled sugar

Method

  1. In a pot, mix the barley groats with water and milk. Bring to a boil and cook on medium heat for 10-15 minutes, stirring frequently.
  2. Add sugar and honey, stir well and cook for another 5 minutes.
  3. In another bowl, toast the almonds and walnuts in a non-stick pan on medium heat.
  4. Cut the dried fruit and mix it with the almonds and walnuts.
  5. Add the dried fruit, almonds, and walnuts to the pot with the barley groats. Stir well.
  6. Finally, add the cocoa powder and cinnamon powder, stir well.
  7. Bring to a boil for 2-3 minutes and turn off the heat.
  8. Place the pulled sugar in a paper bag and shape it decoratively on top of the kutia.

The story

Kutia is a sweet that has its roots in pre-Christian traditions but has become an important symbol in Ukrainian Christmas culture.
